Easy recipe for cooking vegetable biryani

Winter vegetables can be called a gift of nature for us. Going to any market in the winter morning and seeing fresh vegetables fills the mind.

If you have colorful vegetables with biryani, it looks beautiful and the nutrition also matches well. And it is delicious to eat. You can cook delicious vegetables with different vegetables at home. Let’s know the recipe-

Materials:


biryani rice – 500 grams
One cup of cauliflower
Half a cup of broccoli
Carrots (cut into cubes) half a cup
Potatoes (cut into cubes) half a cup
Half a cup of peas
Three and a half cups of vegetable stock
Ginger paste 1 tablespoon
1 teaspoon of garlic paste
1 tablespoon of onion paste
Cumin paste 1 teaspoon
1 tablespoon of poppy seed paste
The amount of salt
2 tablespoons of lemon juice
1 teaspoon of sugar
Half a cup of milk
10-12 green chillies
Half a cup of oil
Clove, 4 cinnamon
Bay leaves 2 cardamoms
Ghee 3 tablespoons.


Method: First boil all the vegetables separately with salt in boiling water. Then wash the rice, pour water over it, heat the oil in a pot, boil the hot spices and bay leaves in it, add the other spices and add the vegetable stock.

When the water boils, add lemon juice and rice. When the water is dry, add milk, sugar and chilli and keep it on low heat for 5-6 minutes. Finally with all the vegetables, ghee on the vegetables should be simmered for 20-25 minutes. Then make delicious vegetable biryani.

Tips

1. If the cauliflower is very young, it will work even if it is not steamed.
2. If the rice is old then you can make more or less water.
3. I gave a pinch of turmeric while boiling the vegetables to make it look good. If not, there is no problem.
4. The peas need to be soaked in boiling hot water for a while and then removed.
5. In addition to the above vegetables, you can take the vegetables of your choice.
6. Sugar enhances the taste of food so it is better to give 1 tablespoon of sugar. If not, there is no problem.
7. Even if you don’t garnish this polao. Because it’s so colorful.
8. If you do not want to use ghee / butter oil, you can cook with soybean oil / vegetable oil. Or you can mix and cook.
